INGREDIENTS
- 1 cup halved cranberries
- 1/4 cup white sugar
- 2 oranges, peeled and thinly sliced
- 1 red onion, thinly sliced
- 4 cups shredded cabbage
- 1 large apple - peeled, cored and chopped
- 1/4 cup mayonnaise
DIRECTIONS
- In a small bowl, toss together the cranberries and sugar. Cover and refrigerate.
- In a large bowl, toss together the oranges, onion, cabbage, apple and mayonnaise until evenly coated. When ready to serve add cranberry mixture and toss again

This was a delicious change to coleslaw or cabbage salad. I used dried orange-flavoured cranberries instead of the sugared cranberries and I think it worked well. I think I will use canned drained mandarin oranges next time. I made this for a Mother's Day supper and everyone loved it!

| Reviewed on Aug. 15, 2005 by Sam from Texas People can't get enough of this salad. No matter how much we make, people finish it off. With no fresh cranberries, we use dried. We also add a good splash of white wine vinegar for a litle pizzazz. Make sure the cabbage is just one of the ingredients, not a major player. 16 users found this review helpful |
